About the Plant

Caigua is a traditional Andean climbing vegetable grown for its unique hollow fruits that are perfect for stuffing. This vigorous vine produces elongated green pods with soft ridges and thrives when grown on trellises or garden supports.

Native to Peru and other parts of the Andes, caigua has been cultivated for centuries and is a beloved ingredient in traditional Peruvian cooking.

The plant grows quickly in warm weather and produces abundant harvests throughout the summer.

How to Grow (Simple Steps)

Start seeds indoors 3–4 weeks before the last frost or sow outdoors after soil warms.
Plant seeds ½ inch deep in rich, well-draining soil.
Provide a trellis or climbing support.
Space plants 18–24 inches apart.
Harvest fruits when they are young and tender.

Flavor Profile

Mild, fresh, slightly cucumber-like with a soft texture when cooked.

Peruvian Kitchen Inspiration

Caigua is the star ingredient in Caigua Rellena, a beloved Peruvian dish where the hollow fruits are stuffed with seasoned meat, vegetables, and spices before being simmered in a flavorful sauce.

It can also be sautéed, added to stir-fries, or used in vegetable dishes where its mild flavor absorbs delicious sauces.
