About the Plant

Peruvian Choclo, also known as Cusco Giant Corn, is one of Peru's most treasured heirloom crops. Unlike traditional sweet corn, this variety produces exceptionally large white kernels with a firm, tender texture and rich corn flavor that has been enjoyed in the Andes for centuries.

This warm-season crop grows into tall, vigorous plants that thrive in full sun and fertile soil. Because it requires a longer growing season than most American corn varieties, gardeners in cooler climates may benefit from growing it in large containers that can be protected from early fall frosts.

How to Grow (Simple Steps)

  • Soak seeds for 24 hours before planting for improved germination.

  • Pre-sprout seeds in a damp paper towel or cotton inside a sealed bag until the root emerges (optional but recommended).

  • Plant seeds 1–2 inches deep in rich, well-draining soil.

  • Space plants 8–12 inches apart in blocks rather than single rows to improve pollination.

  • Keep soil consistently moist and provide at least 6–8 hours of direct sunlight daily.

  • Harvest when the kernels are large, tender, and release a milky liquid when pressed.

Peruvian Choclo is a staple ingredient in traditional Peruvian cuisine. It is commonly served alongside ceviche, paired with fresh cheese as choclo con queso, and enjoyed in dishes such as ají de gallina, causa, solterito, pachamanca, and caldo de gallina.

Its large kernels and distinctive texture make it one of the most recognizable ingredients in Peruvian cooking.
