Ají Amarillo is the heart of Peruvian cuisine — a vibrant yellow-orange pepper with a fruity, citrus-like flavor and medium heat. Known as the soul of Peruvian dishes, it adds both color and depth to countless recipes, making it one of the most cherished heirloom peppers from the Andes.

How to Grow (Simple Steps)

1. Start seeds indoors 8–10 weeks before the last frost.

2. Sow ¼ inch deep in warm, moist seed-starting mix.

3. Keep soil temperature between 75–85°F for germination.

4. Transplant outdoors after frost when plants are at least 6 inches tall.

5. Harvest when peppers turn deep yellow-orange and firm.
